Recipe Of The Week: White Fish with Macadamia Salsa

Ingredients
2 white fish fillets
¼ cup macadamias, halved
½ cup chopped tomatoes
1 avocado, peeled, seeded and diced
3tbs coriander, chopped
3tbs parsley, chopped
Olive oil

Instructions
Pre-heat grill to medium heat.
Place fish on grill and cook for 3-4minutes or until cooked.
To make the salsa, place macadamias, tomatoes, avocado, coriander and parsley in a mixing bowl, combine well. Add olive oil to coat.
Place fish and salsa on a plate to serve.

Goal Of The Week: Drink at least 64 ounces of water a day. Purchase a Klean Kanteen (a stainless steel water bottle) to carry your water around with you. Plastic bottles leach BPA into your water. BPA is an endocrine disrupter, i.e., it messes with your hormone levels.

This article is especially relevant for us, because we all live within close proximity of Lake Norman and various state parks. With the weather improving day by day, let us make an effort to get out in nature daily, whether in your own yard, or in one of the nearby parks. Research shows that the more greenery we are exposed to and surrounded by, the less depression, mental decline, and physical ailments we have. So grab a friend, loved one, or stranger, and get outside this week!
